You'll need: · 500g macaroni · 2 cups grated cheddar cheese · 1 cup mozzarella cheese · 2 tablespoons butter · 2 tablespoons flour · 2 cups milk · 1 cup mixed vegetables (peas, carrots and sweetcorn) · 1 teaspoon garlic powder · 1 teaspoon mixed herbs · Salt and black pepper to taste · A handful of breadcrumbs for a crunchy topping (optional) Here's how to make it. Cook the macaroni until just tender and drain. In a saucepan, melt the butter, stir in the flour, then slowly whisk in the milk until you have a smooth, creamy sauce. Season with the garlic powder, mixed herbs, salt and pepper, then stir in most of the cheese until melted. Add the cooked macaroni and the mixed vegetables, mixing everything together until well coated. Transfer to a greased ovenproof dish, sprinkle over the remaining cheese and, if you're using them, the breadcrumbs. Bake at 180 degrees for about 20 to 25 minutes until golden, bubbling and beautifully cheesy. It's simple, affordable, meat-free and perfect for feeding hungry families during the school holidays.
