Breaking barriers in the aviation industry -18 August 2024

ngredients:

3 boneless skinless chicken breasts 

1 onion

1 lime 

3 peppers, red, yellow and green or orange 

3 tablespoons of olive oil

1 tsp chilli powder 

½ tsp smoked paprika 

½ tsp onion powder 

½ tsp black pepper

½ tsp cumin optional 

Salt to taste 

Method  

1. Cut the onion into slivers and slice the peppers

2. In a separate bowl, combine 1 tablespoon olive oil, juice of ½ lime, chilli powder, paprika, onion powder, pepper, cumin and salt. Cut chicken into strips and toss with the spice mixture. 

3. Preheat 1 tablespoon of olive oil over medium high. Add ½ of the chicken and cook for about 3 -5 mind. Remove from the pan and set aside. Repeat with the remaining chicken. 

4. Set chicken aside and add 1 tablespoon of oil to the pan. Drain the onions well and cook for 2 minutes. add in sliced peppers and cook for an additional 2 minutes. Add chicken back to the pan and stir to combine. 

5. Squeeze additional lime overtop and serve over tortillas. Enjoy
