Today, we’re making quick and delicious – “Edamame & Veggie Rice Bowl”.
The ingredients in this vegan grain bowl recipe can be prepped ahead and the tangy citrus dressing is a refreshing flavour with the sweet caramel of the roasted sheet-pan veggies!
Ingredients:
½ cup brown rice
1 cup roasted vegetables
¼ cup edamame
¼ avocado, diced
2 tablespoons sliced scallions
2 tablespoons chopped fresh cilantro
2 tablespoons Citrus-Lime Vinaigrette
Method:
1. Cook rice and arrange at the bottom of the bowl.
2. Chopped up veggies and assemble on top.
3. Add edamame and avocado.
4. Top with scallions and cilantro.
5. Drizzle with vinaigrette just before serving.
