Strawberry Shortcake is a classic dessert that is perfect for any occasion. It's easy to make and always a crowd-pleaser. This recipe will show you how to make a delicious shortcake and top it with fresh strawberries and whipped cream.

Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cut into small cubes
  • 2/3 cup (160ml) heavy cream, cold
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pound (450g) fresh strawberries, hulled and sliced
  • 1/4 cup (50g) granulated sugar
  • Whipped cream, for serving

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your hands to cut the butter into the flour until it resembles coarse sand.
  4. In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the mixture into the flour mixture and stir until just combined.
  5. Turn the dough out onto a lightly floured surface and knead a few times until it comes together into a smooth ball.
  6. Pat the dough out into a circle that's about 1 inch (2.5cm) thick. Use a biscuit cutter or a glass to cut out 6-8 rounds and place them on the prepared baking sheet.
  7. Bake for 15-20 minutes or until the shortcakes are golden brown and a toothpick inserted into the center comes out clean.
  8. While the shortcakes are baking, prepare the strawberries. In a medium bowl, toss the sliced strawberries with the sugar and set aside.
  9. To serve, split each shortcake in half and top with the strawberry mixture and a dollop of whipped cream.
