Classic ANZAC Cookies Recipe

Ingredients:

  • 1 cup (150g) all-purpose flour
  • 1 cup (90g) rolled oats
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (60g) unsweetened shredded coconut
  • 1/2 cup (115g) unsalted butter
  • 2 tablespoons (30ml) golden syrup
  • 1/2 teaspoon baking soda
  • 2 tablespoons (30ml) boiling water

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine the flour, oats, sugar, and shredded coconut.

  3. In a small saucepan, melt the butter and golden syrup over low heat, stirring constantly.

  4. In a small bowl, dissolve the baking soda in the boiling water.

  5. Add the baking soda mixture to the butter mixture, and stir to combine.

  6. Pour the butter mixture into the dry ingredients and stir until everything is well combined.

  7. Roll the dough into balls about 1 inch (2.5cm) in diameter and place them on the prepared baking sheet, leaving about 2 inches (5cm) of space between them.

  8. Bake the cookies for 12-15 minutes or until they're golden brown.

  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.

  10. Transfer the cookies to a wire rack to cool completely.
