Ingredients:

  • 4 (6-ounce) beef tenderloin steaks
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons minced shallots
  • 1 clove garlic, minced
  • 1/4 cup brandy
  • 1/2 cup beef broth

Instructions:

  1. Season the beef tenderloin steaks with salt and pepper on both sides.

  2. Heat a large skillet over medium-high heat. Add the butter and let it melt.

  3. Add the steaks to the skillet and cook for 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Once cooked, remove the steaks from the skillet and set aside.

  4. Add the shallots and garlic to the same skillet and sauté until they are softened, about 2-3 minutes.

  5. Pour in the brandy and cook for 1-2 minutes until the alcohol has evaporated.

  6. Add the beef broth to the skillet and let it simmer until it has reduced by half.

  7. Stir in the heavy cream and Dijon mustard and let the sauce simmer for 1-2 minutes.

  8. Add the steaks back to the skillet and spoon the sauce over them.

  9. Sprinkle with chopped parsley and serve immediately.
