Maklouba is a traditional upside-down rice dish featuring layers of tender lamb, fresh vegetables and spiced rice, popular during Ramadan celebrations. The dish is prepared by layering ingredients in a pot with stock and slow-cooking for 45 minutes to an hour before dramatically flipping it onto a serving platter. Ramadan observers fast from sunrise to sunset without food or water, traditionally breaking their fast with dates and light drinks like Amar ad-Din before enjoying celebratory meals.
