Blake Prouds Banana Oat Loaf Cake

Ingredients
1 cup self-raising flour
1 cup quick oats
2 ripe bananas, mashed
½ cup sweetened condensed milk
½ cup milk (any kind — full cream, light, or even oat/almond)
2 eggs
Pinch of salt

Method
1. Preheat oven to 170 °C (fan-forced).

2. Grease & line a medium loaf tin (22 × 12 cm).

3. Mash the bananas in a large bowl.

4. Whisk in condensed milk, regular milk, and eggs until smooth.

5. Fold in flour, oats, and salt. Mix gently until just combined (don’t overmix).

6. Pour into prepared tin, smooth the top.

7. Bake 35–40 mins or until a skewer comes out clean.

8. Cool 10 mins in tin, then turn onto a rack.
