Asian Flavoured Pork Ribs

Ingredients (Serves 4–6)
2–3kg beef short ribs
Salt & pepper
3 tbsp vegetable oil
4 cloves garlic, minced
1 thumb-sized ginger, grated
1 cup soy sauce
1/2 cup brown sugar
1/4 cup honey
1/4 cup rice vinegar
2 tbsp hoisin sauce
1 tbsp sesame oil
1 cup beef stock

Method
1. Preheat oven to 150°C.

2. Pat ribs dry, season generously with salt & pepper.

3. Sear in oil until a deep crust forms. Remove.

4. Sauté garlic & ginger in same pan.

5. Stir in soy, sugar, honey, vinegar, hoisin, sesame oil, and stock.

6. Return ribs, coat in sauce, cover tightly with foil.

7. Bake 3.5 hrs until fork-tender.

8. Remove ribs, reduce sauce on stovetop until sticky.

9. Brush sauce over ribs, return to oven at 220°C for 10 min to form a bark.
