Rita Heikenfeld’s Gingerbread Manger Cookies

The fun thing about this recipe is that the dough is forgiving so it can be re-rolled without getting tough. Let the little ones cut out gingerbread men shapes and decorate them as Joseph, Mary and Jesus.

Ingredients:
1/2 cup butter
1/2 cup sugar
1/2 cup molasses
1 egg
2 cups flour
1 teaspoon baking soda
1/2 teaspoon ginger
1 teaspoon cinnamon
1/8 teaspoon ground cloves

Instructions
Preheat oven to 350.Melt butter, sugar and molasses.
Beat in egg.
Whisk flour, soda, ginger, cinnamon and cloves together.
Stir into egg mixture until well blended. Mixture will be sticky.
Refrigerate at least 2 hours or more, then roll out 1/4” on floured surface to keep dough from sticking. Cut with cookie cutters and place an inch apart on parchment lined or sprayed cookie sheets. Bake 8-10 minutes.
