While turkey is king over the Thanksgiving holiday, there’s a growing opportunity for other meats to take some of the spotlight. According to economists at CoBank, some consumers have moved away from preparing a whole turkey for Thanksgiving, and ham is capturing a larger share of protein purchases. So today, we ask the butcher what the best options are for preparing ham for the holiday table. Nick Vorpagel joins us at Lake Geneva Country Meats, a third-generation butcher shop. They do custom processing of beef, hogs, and lambs in addition to their retail store. Ham is one of his specialties – and there are multiple cuts out there for you to experiment with. Wisconsin agriculture remains a cornerstone of the state's economy, despite facing challenges in 2024. Dr. Steve Deller and Jeff Hadachek, economists with the University of Wisconsin, have released their latest study, The Contribution of Agriculture to the Wisconsin Economy,highlighting trends, challenges, and opportunities as the state moves toward 2025

Hadachek, in his first year with UW Extension, emphasized the significance of food processing. "Of the $116 billion Wisconsin agriculture contributes to the state economy, $107 billion comes from food processing" he noted. "From cheese makers to cranberry processors, much of the value happens off the farm."

Food processing has grown substantially, increasing from $82 billion in 2017 to $107 billion today. "Labor productivity is rising, but fewer workers are spending money in local economies," said Deller.

From the Field to the Economy: What Wisconsin Ag Brings to the Table

Thanksgiving is the culmination of a lot of work by turkey growers across the country, but primarily the midwest.  Ben Jarboe finds out how avian influenza, changing consumer tastes, and overall economics are impacting the industry.  Ashley Kohl with the MN turkey growers says there will be plenty of birds available this year.

Two UW-Madison ag economists released some BIG numbers showing the strength and power of Wisconsin agriculture.  Pam Jahnke visits with Steve Deller and Jeff Hadachek about the survey showing the state's ag and food processing industries are a $116.4 Billion sector for the state's bottom line.

Wisconsin Ag Statistical Service confirms that the harvest is complete and 81% of fall tillage has already been completed.

Saturday's the beginning of Wisconsin's gun-deer season.  Jeff Pritzl, DNR deer program specialist says that this year's hunt is about as late as it's ever been.  That, along with a completed harvest, will create both challenges and rewards for this year's hunters.
