While beef, pork, and chicken are the usual stars in grocery aisles, farmer Leslie Svacina of Cylon Rolling Acres is making a strong case for goat meat. Based in Deer Park, Wisconsin, Leslie and her husband are transforming perceptions about this lesser-known protein through hard work, innovation, and a focus on meeting diverse consumer needs.
“I noticed a significant gap in the market,” Leslie shared. “Goat meat was hard to find, even though demand was growing, especially among diverse communities.”
The journey began over a decade ago when Leslie and her husband decided to explore farming opportunities. With limited access to family land and a desire to make the most of small acreage, they chose goats. Starting with just ten animals, Leslie learned the nuances of goat care and management.
“Goats are unique,” Leslie explained. “They have their quirks, but they’re efficient and adaptable, making them perfect for small-scale farming.”
Over time, Cylon Rolling Acres expanded its herd, leveraging the rapid reproduction rates of goats. With thoughtful planning, the farm now offers high-quality goat meat to a growing customer base, both online and locally. Currently, goat meat from their farm averages $19-25 per pound for leg and chops, and $16-17 per pound for ground.
