Pink Heifer started in Monticello, Wisconsin, where the team spent four years perfecting recipes before expanding to Madison. Their State Street location focuses on quick service barbecue without sacrificing quality, featuring slow smoked brisket cooked for 12 to 14 hours, pulled pork, smoked chicken, and signature sides like mac and cheese and cornbread. The brisket is the standout, developed with guidance from veteran pit master John Rosenberg, who brings more than 25 years of barbecue experience.

Pink Heifer also supports the community through the Farmers and Family Initiative, donating one dollar from every Wagon Roll sold to help local farm families.
