In this episode, Kenneth once again sits down with Jeff Champeau / President of Rishi Tea, and Botanicals. Today they discuss Green, White and Matcha teas. Jeff explains the differences and how to prepare each one like an expert. He also explains more about how tea is grown and harvested.


  • What part of the plant is harvested and when depends on the type of tea being made.
  • Tea is harvested on sunny days. Harvesting is a dance between the tea masters, the pickers, and Mother Nature.
  • The way green tea is processed changes the flavor profile.
  • Matcha is powdered green tea.
  • White tea is the least processed.
  • Matcha can be prepared in classic coffee styles, including espresso.
  • Green tea is very temperature sensitive.

ABOUT THE CO-HOST: Katie Thomas is Kenneth’s oldest daughter and brings an entertaining flair to the podcast.  She’s still learning about coffee and thus makes the perfect co-host.  She, like the listeners, would claim to be a ‘101-er’ - like you - coffee curious.  She’ll be the future of the coffee industry, and the future looks very bright!
