Simon manages to make me self-conscious about my fixation with getting food poisoning (are we NOT all fixated on this??!) but we make it through to a truly great prawn salad that can be the perfect stand-in for a Lobster Roll ā¦or just a really great prawn salad!Ā

Recipe
Boil raw prawns in a big pot of water that has a tablespoon of rice vinegar.Ā
As soon as the prawns go opaque, take them out of the boiling water, plunge in an ice bath, then dry them off in a clean towel. If they're still in their shells, peel the prawns.Ā
Cover in a dressing of:Ā
1/2 cup Greek yoghurtĀ
2 tsp Dijon mustardĀ
salt and pepperĀ
1/4 cup Kewpie mayoĀ
dillĀ
chivesĀ
1 whole Lebanese cucumber, crushed and slicedĀ
Dress the fresh-cooked prawns in the Greek yoghurt dressing, then serve stuffed into fluffy white bread rolls.Ā
