My special guest today is Ian Charles from Aqua Sustainable.  A very highly respected and awarded Murry cod Farm on the Murry Darling Basin in the Riverina, NSW. Their mission is to produce great-tasting Murray cod, fully traceable from pond to plate, in a way that’s respectful to the environment, our growers, and community.  And I can tell you from experience, they are achieving this very successfully.
