Tunes and ramblings as per usual for the first half of the program.
Just after 7:30am Antoinette Pitt joined us in the studio for a natter about state politics and her pending nomination as an independent candidate for Eastern Victoria in the state's upper house. We chatted about the process of entering politics, policies of kindness and our disappointment in the current state of affairs of politics with the failing two party dominated system.
Ant is a real human who feels passionate about her community and is motivated to make real changes in the way people are represented by their politicians. No party to serve, it's all about the people.

RED LENTIL COTTAGE PIE
Ingredients:
800g potatoes
1 medium brown onion - finely chopped
1 clove garlic - crushed
1 x 415g tin crushed tomatoes
1 cup vegetable stock
1 cup water
2 tablespoons tomato paste
1/3 cup dry red wine - I never seem to have any wine in the house!
2/3 cup red lentils (dry)
1 medium carrot - grated of chopped finely
1/2 cup frozen peas (thawed) - add other chopped veges like cauliflower or broccoli if you like
1/3 cup flat leaf parsley
1/4 cup hemp seeds
Parmesan cheese
Method:
Boil potatoes and mash with 1/2 the butter
Melt remaining butter in a deepish frypan, cook the onion and garlic, stirring until they soften
Add the tomatoes, stock, water, paste, wine, lentils and carrot (and any other veges you choose) and bring to the boil.
Reduce heat and simmer uncovered for 15 minutes
Add peas and parsley and cook uncovered for a further 5 minutes
Spoon mixture into a pie dish (I like to use single serve dishes), sprinkle the hemp seeds evenly then top with the mashed spud and finally add the parmesan cheese (or any other type of cheesy goodness)
Bake in an oven at 160C for 20 minutes. Stand for 10 minutes before serving
Eat!
