Maybe it's just a sort of laziness, but when it comes to putting a starch on the plate, I almost always opt for potatoes.  Well shame on me, because I know perfectly well that a very tasty and easy to prepare option is right there for me to use.  And it was obvious to Chef Jerry Pellegrino, that I am of course referring to the sweet potato, which is actually far more tasty than any white potato I know.
