Flybird, the chargrilled chicken restaurant which opened five months ago in a Delray strip mall, at first glance may appear to be some sort of cool franchise, thanks to its snappy signage and well-focused menu. But, Flybird is the brainchild of former Food Network celebrity and veteran New York chef, Michael Salmon. He says his centerpiece dishes all begin with premium chicken known as “never ever chicken” -- that means free-roaming birds never treated with antibiotics, hormones or steroids. His top-seller is a fried chicken sandwich he calls the Crunchy Frybird, served on a soft potato bun with slaw and chipotle mayo. He makes everything at the shop from soups and sides to entrees. And, there's a house-made dessert selection that includes a scrumptious mango-coconut-tapioca pudding.
