After the harvest, the perennial plants need to be prepped and protected for the winter. Inside the facility, cranberries are processed and packaged for retailers using unique, antique or state-of-the-art machinery. For folks doing their holiday shopping – Ray says fresh cranberries are good frozen, so buy more fresh cranberries than you need. Freeze them. And enjoy the berries in recipes long after the holiday season.
