Jack Zheng’s egg tart recipe:
Roll out the butter between parchment paper
Refrigerate till solid
Place butter in the centre of the dough
Fold like an envelope
Roll out flat
Repeat 2 times
Divide into portions
Press into tart tins
Fill
Bake!
