I'd heard of them, and knew they were a helpful cause here, but I had wondered how they got their slightly unusual name. 

The answer is very simple and I thank friend Mary Bilyeu for connecting me to Stacy Willis, a social worker at Jewish Family services who helped bring the burrito concept here.
