Amine's kefta kebab !

Sous chef Amine Laabi joined Andrew to give his recipe for kefta kebab with mint, feta tzatziki and kalamata olives!  

Ingredients:

  • 6 POM® Signature Sausage Brioche Buns
  • 100g feta cheese
  • 50 slices of kalamata olives
  • 10 fresh mint leaves, chopped
  • 1 French shallot, minced

Kefta:

  • 300g minced lamb
  • 300g ground veal
  • 1 tbsp. ground cumin
  • 1 tbsp. sumac
  • 1 tbsp. salt
  • 1 tbsp. chopped mint

Tzatziki:

  • 3/4 cup plain Greek yogurt
  • 1 Lebanese cucumber, grated and drained
  • 1 clove of garlic, finely chopped
  • Juice and zest of half a lemon
  • Salt, to taste

Preparation:

  • Preheat barbecue to 400°F. Combine the kofta ingredients in a bowl and

distribute on skewers. Grill 4 to 5 minutes on each side.

  • In a separate bowl, combine the ingredients for the tzatziki.
  • In a POM® Signature Sausage Brioche Bun, add the tzatziki, a skewer of kefta, crumbled feta, sliced ​​Kalamata olives, mint and shallot. Finish with a drizzle of olive oil.
