Enjoying a freshly-toasted chicken mayonnaise sandwich appears to be a uniquely South African tradition, but why is that? According to a recent online article quoting a European food safety expert, it is because it is deemed an unsafe dish to prepare due to the possible presence of salmonella, listeria and campylobacter, requiring adherence to strict food safety protocols. Lester Kiewit speaks to Professor Lucia Anelich, a food safety expert who has personally inspected many commercial kitchens and believes the risk of food poisoning from a toasted chicken mayo has been blown out of proportion, and no reason for us to be shunning it.
