France Soir and Hector's Deli are venues that Melburnians hold dear. The former is a late-night dining institution that has served the city for 38 years and welcomed the likes of The Rolling Stones and Bruce Springsteen through its doors. Many of our milestones have been celebrated over France Soir's creme brûlée or a dip into their renowned wine list. Hector's Deli is a more recent star of the lunchtime scene, dishing up some of Melbourne's best sandwiches. Dom Wilton, chef and owner, believes both establishments have the shared ethos of “perfecting simplicity”.
