So you call the restaurant, order a takeaway, walk-in to collect it, and the waiter hands you the bill with a pen to write how much the tip is… Is this a thing? 

You are not sitting down, you are not expecting service from them, you just ordering and collecting… Then surely you should be tipping the chef.
